Lovely bubbly Sunday at Paresa Phuket

PHUKET: Around 50 guests attended the Villa Sandi brunch at Paresa resort in Kamala on Sunday (February 24).

The six-course brunch was the perfect way to start the bright and sunny day, with each dish being accompanied by a carefully selected glass of bubbly.

Easily the stand-out plate was the deceptively simple sounding mushrooms on toast.

This featured oven roasted and balsamic glazed Portobello mushrooms with arugula, grilled ciabatta, parmegano regiano cheese, crispy chorizo, sous vide, duck egg yolk and hollandaise.

Good quality, large mushrooms are a real treat for Phuket residents and these were cooked to perfection by Paresa Executive Chef Ryan Arboleda.

Hailing from New Zealand, Chef Arboleda also later served his rendition of the classic Aotearoa breakfast – steak, eggs and chips. It was delicious, at least to this Kiwi, although by this stage many guests were already beyond full after sampling the many earlier dishes.

Villa Sandi South-East Asia Pacific brand ambassador Francesco Nierotti, based in Bangkok but down in Phuket for the special brunch, said his favourite match was the mushroom dish, which was accompanied by Villa Sandi Rosato Spumante.

“The balsamic and mushroom taste is acidic, and along with the creamy egg, it is a balanced meal. The prosecco is the perfect match – it brings out the flavour and makes it more intense,” said Mr Nierotti.

Villa Sandi is based in northern Italy, in the Veneto region. It is the second largest producer of prosecco in Italy, and the company makes 1.4 million bottles per year.

Mr Nierotti says the company’s biggest markets are the US and Japan, with Thailand in the top five. Phuket is an important market because of all the high-end hotels and resorts located here, he says.

Mr Nierotti said the Villa Sandi Prosecco Brut II Fresco is the most popular choice by far, and was introduced into Starbucks Cafes across the United States around two months ago as the “chosen” prosecco as the coffee chain upgraded to include alcoholic beverages.
